Artichoke vinaigrette with Raspberry and Lemon flavours

  • 4 artichokes
  • Coarse salt & pepper
  • 10 tbsp. olive oil
  • 3 tbsp. balsamic vinegar
  • 1 tbsp. old-fashioned mustard
  • 30 drops of raspberry flavouring
  • 10 drops of lemon flavouring
Preparation:
  1. Break off the tails of the artichokes and cut flush underneath. Remove the larger leaves from the outside of the artichokes.
  2. Heat 2 litres of water and add coarse salt.
  3. Immerse the artichokes and cook for 30 minutes at a simmer.
  4. Meanwhile, whisk the vinegar with the salt and pepper.
  5. Whisk in the mustard, oil and flavourings.
  6. Set aside, then drain the artichokes head down and serve them warm with the vinaigrette.
