- 2 eggs
- 125g flour
- 1 pinch of salt
- 2 tbsp. sugar
- 150ml semi-skimmed milk
- 5 drops of banana flavouring
- 1 tbsp. baking powder
Preparation:
In a large bowl, mix the dry ingredients: flour, yeast, sugar and a pinch of salt.
In another bowl, mix the 2 egg yolks with the milk and the drops of banana flavouring then add to the dry ingredients while mixing, you will obtain a thick pancake batter texture, leave to rest for 15 to 30 minutes.
Beat the egg whites until stiff and add them gently to the mixture.
Cook in a hot buttered pan for 1 minute on each side.
The edge should be golden brown and small bubbles should form on the top, now it's time to flip the pancake!
