I discoverCarpaccio of prawns with pineapple flavouring

- Dill
- 2 limes
- 1 tbsp olive oil
- 1 cm fresh ginger
- 1 tsp of Nuoc Màm sauce
- 400g raw shrimp
- Sweet and sour chilli sauce
- 6 drops of pineapple flavouring
Preparation:
- Peel the shrimp, cut them in half lengthwise and remove the belly.
- Prepare a dressing of oil, Nuöc Màm, grated ginger, lemon juice and pineapple flavouring.
- Flatten the ½ prawns gently before lining them up on a soup plate and cover with a little of the dressing, leave to marinate for 20 mins.
- Sprinkle with dill or chervil and serve with a small ramekin of Sweet and Sour sauce or eat them plain.
