Cauliflower gratin with black truffle flavour

  • 1 cauliflower
  • 50 cl of milk
  • salt and pepper
  • 25 g flour
  • 25 g butter
  • 100 g grated Gruyere cheese
  • 1 tsp. natural truffle flavouring (water soluble)

Preparation:

1. Cook the cauliflower in a pan of boiling salted water until tender. Drain and set aside.

2. Melt the butter in a saucepan. Add the flour and mix.

3. Gradually add the milk, stirring with a whisk.

4. Add the natural black truffle flavouring and season with salt and pepper.

5. Leave to cook for about ten minutes on a low heat while stirring until the sauce is thick.

6. Preheat the oven to 180° C.

7. Spread the cauliflower florets in a gratin dish, pour the bechamel and sprinkle with Gruyère cheese.

8. Bake for 30 minutes and serve.
