I discoverChewing gum flavoured marshmallow
- 100 g water
- 3 egg whites
- 8 sheets of gelatine
- 250 g powdered sugar
- Coloured food colouring
- 1 tbsp. honey or glucose syrup
- 1 tbsp. chewing gum flavouring Icing sugar
Preparation:
1. Soak the gelatine sheets in cold water.
2. Pour sugar, water and honey into a saucepan and bring to the boil until the syrup reaches a temperature of 125°.
3. Beat the egg whites in a large bowl and set aside. When your syrup has reached 125° add the gelatine (drained).
4. Beat the egg whites until stiff, adding half the caster sugar gradually.
5. Stir to dissolve the gelatine completely.
6. Start beating the egg whites again, carefully pouring in the syrup and beating until the mixture has cooled.
7. Add the tablespoon of natural chewing gum flavouring.
8. If you want to colour your marshmallow, divide the dough into several bowls according to the number of different colours you want to use and add your colouring agents then place in the fridge for about 2 hours.
9. Before unmoulding your marshmallow, sprinkle a large amount of icing sugar on your work surface and put some on your hands.
10. Cut out your marshmallow as you wish using cookie cutters or simply with a knife. As you create your shapes, place them in a container with icing sugar (this will prevent the marshmallow from sticking).
11. All you have to do is enjoy!
