I discoverChicken Dumplings with Lime Flavour
- 1 egg yolk
- 10 ml chopped garlic
- 15 ml hoisin sauce
- 15 ml chopped parsley
- 1/2 chopped Thai chilli
- 250 g chopped chicken
- 30 ml sesame oil
- 15 ml chopped ginger
- 15 ml chopped coriander
- 24 sheets of gyoza dough
- 125 ml chicken stock
- 60 ml chopped dry shallots
- 15 ml sodium-reduced soy sauce
- 1 tbsp. lime flavouring
Preparation :
1. In a frying pan, heat half the sesame oil over medium heat.
2. Cook ground chicken for 4-6 minutes, breaking up with a wooden spoon, until no longer pink.
3. Add shallots, ginger and garlic.
4. Cook for 1 minute.
5. Add soy sauce, hoisin sauce, parsley, coriander, chilli and lime flavouring.
6. Continue cooking for 1 to 2 minutes, until all liquid is absorbed.
7. Transfer to a plate and allow to cool.
8. In a bowl, combine sauce ingredients. Set aside.
9. Make the dumplings (see below)
10. In a frying pan, heat the remaining sesame oil over medium heat.
11. Cook the dumplings for 1 minute on each side.
12. Pour the chicken stock into the pan. Cover and simmer for 3 to 4 minutes on low-medium heat. Serve with sauce.
Making the dumplings :
1. Place about 1 tablespoon of chicken filling in the centre of a sheet of gyro dough.
2. In a bowl, beat the egg yolk with a few drops of water.
3. Brush the egg yolk around the edge of the sheet.
4. Holding the leaf in your hands, gently fold it in half, taking care not to move the filling.
5. When the two layers of dough are even, use your thumb and forefinger to gently press them together.
6. Seal the two layers of dough together by making small folds in the dough with your fingers.
7. Press over the folds with your fingers to make sure the sides are sealed.
