Christmas log with vanilla and red fruit flavouring

80g flour
50g butter
1 tsp red fruit flavouring

1- In a bowl, whiten the sugar and the yolk (mix firmly with a spatula, so that the mixture turns from orange to light yellow).

2- Add the flour and the red fruit flavouring to the mixture and mix again firmly.
3- Beat the egg whites into a stiff pebble, mixing gently so that everything is aerated.
4- Spread the mixture on a sheet of baking paper, previously placed on a baking sheet. Bake for 10 minutes at 180°C.
5- Take the sponge cake out of the oven and lay it on a wet cloth.
6- In a saucepan, cook 5 cl of water with the sugar and vanilla seeds over a medium heat for 8 to 10 minutes to obtain a thick syrup (small ball). Let it cool down.
7- In a bowl placed on a bain-marie, whisk the eggs.
8- Remove the bowl from the water bath and pour the sugar syrup over the eggs while continuing to beat. Add the butter as you go, beating gently.
9- Spread some cream on the biscuit, roll up the log and add some cream on top.
10- Toast some almonds in a pan and add them to the top of the log
