Clafouti with rhubarb and cinnamon flavouring

  • 3 eggs
  • 20 cl milk
  • 60 g flour
  • 150 g sugar
  • 500 g rhubarb
  • 200 g double cream
  • 1 tbsp. icing sugar
  • 1 tbsp. cinnamon flavouring
  • 1 vanilla pod or 1 tsp. natural vanilla flavouring

Preparation :

1. Peel and cut the rhubarb into pieces

2. Blanch the rhubarb in boiling water for 2 minutes.

3. Preheat the oven to 200°.

4. Butter the tin and sugar it.

5. Mix all the other ingredients in a bowl

6. Pour into the pan and add the rhubarb.

7. Bake for 40 minutes.
