Fig tartlets with honey and sweet almond flavours

125g flour. 4cc honey flavouring
125g soft butter. zest of half a lemon
1 egg yolk
35g caster sugar
1 pinch of salt
50g soft butter
50g cocoa powder
6 figs
2cc sweet almond flavouring
50g sugar
1 egg

1. For the dough: In a bowl, pour the flour, sugar and salt. Add 75g of soft butter and 2cc of sweet almond flavouring and then make a small well to add the egg yolk. Mix everything together until you have a smooth dough.

2. Film the dough and leave to rest for about 1 hour in the fridge.

3. For the crème cacao: Soften 50g of butter and mix it in a bowl with the cocoa powder, sugar, egg, 4cc of honey flavouring and the zest of half a lemon.

4. Roll out the pastry then use cookie cutters to create your pie shells and place them in the pie tins. Bake for 15 minutes.

6. Remove from the oven and brush with egg white.

7. When the tart shells are pre-baked, spoon the equivalent of 1c cream into them. Cut up your figs and place them on the cream.

8. Bake for 25min
