- Pour the flour in a fountain on the work surface.
- Make a well, add the eggs and the 5-7 drops of flavouring and mix with a fork.
- When the eggs have absorbed the flour, work the dough by hand for about 10-15 minutes until it is compact, smooth and elastic (add water if it is dry or flour if it is too sticky).
- Form into a ball and leave to stand for an hour at room temperature.
- Divide the ball into 3 pieces.
- Pass each piece of dough a first time between the rollers spaced as far apart as possible, then a second time with the rollers more tightly spaced, and continue 5 to 6 times in all to obtain a strip of dough of fine thickness.
- If necessary, add more flour to the dough so that it does not stick.
- Fold the dough well in half before running it through the machine again. Rest the dough on a cloth for at least 10 minutes. You can also use a pasta dryer.
