Fresh pasta with the flavour of your choice

  • 5 eggs
  • 500 g flour
  • 1 fresh pasta machine
  • 5 to 7 drops of the chosen flavouring

Preparation:

  1. Pour the flour in a fountain on the work surface.
  2. Make a well, add the eggs and the 5-7 drops of flavouring and mix with a fork.
  3. When the eggs have absorbed the flour, work the dough by hand for about 10-15 minutes until it is compact, smooth and elastic (add water if it is dry or flour if it is too sticky).
  4. Form into a ball and leave to stand for an hour at room temperature.
  5. Divide the ball into 3 pieces.
  6. Pass each piece of dough a first time between the rollers spaced as far apart as possible, then a second time with the rollers more tightly spaced, and continue 5 to 6 times in all to obtain a strip of dough of fine thickness.
  7. If necessary, add more flour to the dough so that it does not stick.
  8. Fold the dough well in half before running it through the machine again. Rest the dough on a cloth for at least 10 minutes. You can also use a pasta dryer.
