Green asparagus cold soup with fresh hazelnut flavour

  • 1 knob of butter
  • 2 bunches of green asparagus
  • 2 glasses of fresh cream
  • 1 shallot, peeled A little coarse salt
  • 1 tbsp. fresh hazelnut flavouring

Preparation:

1. Peel the asparagus and slice it. Bring a large quantity of water to the boil with a pinch of coarse salt.

2. Place the asparagus in the hot water for 2 to 3 minutes and keep warm.

3. Put the butter in a saucepan and add the chopped shallots. Add the asparagus slices and cook for 5 minutes.

4. Add water to cover everything and place your bouquet garni.

5. Cook for 10 to 15 minutes.

6. Remove some of the water then blend and add the fresh cream and fresh hazelnut flavouring.

7. 7. Set aside in the fridge for about 1 hour before eating!
