Hummus with beetroot and lemon zest

  • 1 beetroot
  • olive oil
  • salt and pepper
  • 1 clove of garlic
  • 260g of chickpeas
  • half a bunch of flat-leaf parsley
  • A little chopped corriander
  • 1 tbsp. double cream
  • 1 tbsp. lemon flavouring

Preparation :

1. Cut the beetroot into large chunks and put them in the bowl of a blender.

2. Add the crushed garlic.

3. Add the chickpeas, chopped coriander and a spoonful of crème fraîche.

4. Add a tablespoon of lemon flavouring.

5. Blend on medium speed, adding the olive oil a little at a time.

Add salt and pepper.
