I discoverLime and Mandarin Spring Rolls

- 1 carrot
- salt and pepper
- 8 rice cakes
- 1 pinch of sugar
- 2 tablespoons of nuoc-mam
- 8 lettuce leaves
- 12 mint leaves
- 100g cooked pork fillet
- 75g raw bean sprouts
- a few chopped coriander leaves
- 12 small shrimps, peeled
- 6 drops of lime flavouring
- 5 drops of Mandarin flavouring
Preparation:
- Wash the bean sprouts. Peel and rinse the carrot and cut into very fine sticks. Cut the pork into strips.
- Bring a large quantity of salted water to the boil.
- Discard the soybeans and carrot sticks. Cook for 2 minutes at low heat.
- Drain and leave to cool.
- Bring another pan of salted water to the boil.
- Pour the rice vermicelli into the pan. Turn off the heat, cover and leave to stand for 5 minutes.
- Rinse the noodles under cold water, drain and allow to cool.
- Gently mix the noodles, pork strips, carrot sticks, soya and lime and mandarin flavouring drops together.
- Moisten a sheet of rice by soaking it in a bowl of cold water and spread it out on a cloth.
- Place a leaf of salad and some filling in the centre. Add 3 mint leaves and 3 shrimps.
- Fold over the edges of the cake to form a small roll, pressing it tightly together. Be careful not to tear the leaf.
- Repeat until all ingredients are used up.
- Place a damp towel over the rolls while waiting to serve them.
- Prepare the sauce by mixing the nuoc-mam, sugar, coriander and 2 tablespoons of water.
