Ingredients for sponge cake :
- 6 eggs
- 100g melted butter
- 120g sugar
- 160g flour
Whipped cream ingredients :
- 250g mascarpone
- 250g full cream 30% (single cream)
- 50g sugar
- 250g strawberries
- Neroliane red colouring
- 2 teaspoons Mango flavouring
Preparation :
1/ Preheat the oven to 180 degrees.
2/ In a bowl, whisk the egg whites until stiff.
3/ In another bowl, beat the yolks with the sugar until pale 4/ Gradually add the flour, the stiffly beaten egg whites and then the melted butter 5/ Butter a tin lined with aluminium foil and pour in the mixture.
6/ Bake in the oven for about ten minutes, remove from the mould and leave to cool.
71 In a bowl, add the mascarpone, cream, mango flavouring and sugar.
8/ Beat until the whipped cream rises.
9/ Crush the raspberries, add half the whipped cream and mix well.
10/ Add 5 drops of neroliane red colouring to the remaining whipped cream, mix and chill.
11/ Place the sponge cake on top and add the raspberry whipped cream.
12/ Repeat the operation for the number of layers you have.
13/ Cover your cake with the whipped cream and decorate as you wish.
