I discoverMelon mousse with natural citrus flavour

2 melons
1 lemon juice
20 cl full cream
30 g icing sugar
2 sheets of gelatine
2 teaspoons citrus flavouring
1. In a bowl of cold water, dip your gelatins to soften them
2. Cut a melon in half and remove the seeds, save the pulp and place in a blender bowl and blend until finely pureed before setting aside.
3. In a saucepan, bring the lemon juice to the boil. Add the gelatine leaves and stir until they melt.
4. Now pour the lemon juice into your melon puree along with the 2 teaspoons of natural citrus flavouring and stir.
5. Whip the cream and add the icing sugar.
6. Mix in the melon puree.
7. Finally, divide the mousse between 4 verrines and keep in the fridge for 3 hours.
8. Cut the second melon into slices and place a slice or two on each plate.
