- 600 g fresh cheese
- 200 g ground Speculoos
- 150 g sugar
- 100 g of double cream
- 25 g flour or cornflour
- 20 cl Milk
- 50 g melted butter
- 3 eggs
- 1 untreated lemon
- 2 tsp natural blueberry flavouring
1. Crumble your speculoos into powder. Melt your butter. 2. Mix the speculoos and the melted butter in a mould. Let it bake for about 10 minutes at 180°. 3. Add your cheese to a bowl, mix in the crème fraîche, lemon zest, sugar and eggs one by one. 4. Add the sifted flour and milk gradually while stirring. 5. Add the natural blueberry flavouring to your mixture. 6. Pour your mixture over your Speculoos cake base. 7. Preheat the oven to 210° and bake the cheesecake for 10 minutes. 8. Leave it in the oven for 1 hour and lower the temperature to 90°. 9. Keep the cheesecake in the oven for another hour and place it in your fridge overnight. Yum, the Blueberry cheesecake is ready to be eaten!
