I discoverOrganic Lemon and Lavender Cake
For the cake :
190g flour
140g sugar
100g liquid cream
50g butter
3 eggs
3/4 teaspoon baking powder
10g lemon zest
10 drops of organic lavender flavouring
For the icing :
100g cream cheese
15g icing sugar
1 teaspoon vanilla sugar
2 tbsp lemon juice
For the cake:
1. Preheat the oven to 150°C.
2. Remove the zest from the lemons.
3. In a mixer, whisk the eggs with the sugar and lemon peel.
4. Add the cream mixed with the melted butter.
5. Add the flour mixed with the yeast and the natural organic lavender flavouring.
6. Pour this smooth, thick batter into a 26 cm long cake tin.
7. Bake for 1 hour. For extra indulgence, add a glaze!
8. Whisk the cream cheese with the sugars and lemon juice and cover the surface of the cold cake with it. Sprinkle a few fresh lavender flowers on top for aesthetic appeal!
