Organic Mango Cheesecake

For the crust:

  • 1 half teaspoon nutmeg
  • 250 grams of crumbled biscuits
  • 125 grams of melted soft butter

For the filling :

  • 3 eggs
  • 25 cl cream
  • 500 g cottage cheese
  • 2 tbsp. flour
  • 150 g semolina sugar
  • 1 tbsp. natural mango flavouring

Preparation :

1. Preheat the oven to 180°C (gas mark 6).

2. Line a 23 cm diameter baking tin with greaseproof paper and butter.

3. Mix the biscuits, nutmeg and melted butter.

4. Line the bottom of the tin with the mixture, pressing it down well with the back of a spoon. Place in the fridge.

5. Whisk the faisselle with a whisk until smooth, then add the sugar and flour and the eggs one by one.

6. Then add the cream and the organic mango flavouring.

7. Pour this mixture over the biscuit crust.

8. Bake for 50-55 minutes until the cheese mixture is firm to the touch.

9. Let cool, remove from the mould and serve chilled.
