- 3 eggs
- 80g flour
- 50g butter
- 200g dark chocolate
- 100g powdered sugar
- 5 drops of cinnamon flavouring
- 1 tsp. vanilla flavouring
Preparation:
- In a bowl, whiten the sugar and the yolk (mix firmly with a spatula, so that the mixture turns from orange to light yellow).
- Add the flour, vanilla flavouring and cinnamon flavouring to the mixture and mix firmly again.
- Beat the egg whites until stiff, mixing gently to ensure that the mixture is airy.
- Spread the mixture on a sheet of baking paper, previously placed on a baking sheet. Bake for 10 minutes at 180°C.
- Remove the sponge cake from the oven and place it on a damp cloth.
- Melt the dark chocolate with the butter in a bain-marie and pour it evenly over the pastry.
- Carefully roll the cake out crosswise.
- Pour more chocolate over the log and decorate as desired.
