Rolled Yule log with Vanilla and Cinnamon flavours

  • 3 eggs
  • 80g flour
  • 50g butter
  • 200g dark chocolate
  • 100g powdered sugar
  • 5 drops of cinnamon flavouring
  • 1 tsp. vanilla flavouring

Preparation:

  1. In a bowl, whiten the sugar and the yolk (mix firmly with a spatula, so that the mixture turns from orange to light yellow).
  2. Add the flour, vanilla flavouring and cinnamon flavouring to the mixture and mix firmly again.
  3. Beat the egg whites until stiff, mixing gently to ensure that the mixture is airy.
  4. Spread the mixture on a sheet of baking paper, previously placed on a baking sheet. Bake for 10 minutes at 180°C.
  5. Remove the sponge cake from the oven and place it on a damp cloth.
  6. Melt the dark chocolate with the butter in a bain-marie and pour it evenly over the pastry.
  7. Carefully roll the cake out crosswise.
  8. Pour more chocolate over the log and decorate as desired.
