I discoverShrimp, guacamole and natural mango flavour bites
- 300 g Greek yoghurt
- 2 eggs
- 200 g flour
- 1 sachet baking powder
For the guacamole :
- 2 ripe avocados
- 1 lime
- ½ red onion
- 1 small chilli
- 1 bunch of coriander
- olive oil
- salt and pepper
For the shrimp:
- 350 g shrimp tails
- ½ tsp smoked paprika
- ½ tsp. cumin
- ½ tsp. salt
- 1 pinch cayenne pepper
- 2 teaspoons natural mango flavouring
Preparation of the blinis :
Mix all the ingredients in a bowl, cover with cling film and leave in a cool place for 1 hour.
2. Cook the blinis in small batches in a pan with a little oil.
3. You will know the blinis are ready to be flipped when the dough makes little "holes".
Making the guacamole :
1. Chop the onion, chilli and coriander finely.
2. Peel the avocados and mash them with a fork.
3. Add the lime juice, onion, chilli and coriander.
4. Mix and chill.
Preparation of the prawns :
1. Peel the shrimp tails before putting them in a bowl with the spices and mix well.
2. Cook in a hot pan for 2/3 minutes and glaze with natural mango flavouring.
Assembly:
Simply spoon the guacamole over the blinis, add a shrimp tail, a coriander leaf and a pinch of fleur de sel.
