I discoverStuffed sardines with lime and ginger flavours

- 3 shallots
- 5 cloves of garlic
- 1 medium onion
- 500g sardines Salt, black pepper and cumin
- 1 tablespoon of tomato paste
- Flour and oil for cooking
- 8 drops of lime flavouring
- 5 drops of ginger flavouring
Preparation:
- Prepare the sardines, gut them, remove the head, middle bone and tail from the sardines.
- Wash and dry them with paper towels. Lay them flat on a tray, skin side down, salt very lightly and put them in the fridge.
- Prepare the stuffing by blending the onion, shallots and garlic in a food processor. Pour into a salad bowl.
- Add the tomato paste, salt, pepper, cumin and the drops of lime and ginger flavouring.
- Take the sardines out of the refrigerator. Make pairs by trying to put the sardines together two by two.
- Spread the stuffing on one of the sardines, and cover each stuffed sardine with the second sardine, as if making a sandwich.
- Heat the oil in a large frying pan for frying.
- Pour the flour onto a sheet of aluminium foil.
- Carefully flour each stuffed sardine on both sides. Pat out excess flour.
- Fry the stuffed sardines in the oil for 2 minutes on each side.
- Serve with a fresh salad and a squeeze of lemon.
