Thai style mussels with lime flavour

  • 1 bird's eye chilli
  • 50g butter
  • 1 tablespoon of olive oil
  • 75 cl red wine
  • 1 stick of lemongrass
  • 5 cl sesame oil
  • 30g fresh ginger
  • 10 cl sweet soy sauce
  • 400g bouchot mussels
  • 5 drops of lime flavouring

Preparation:

  1. Heat the sesame oil in a saucepan, fry the ginger, lemongrass and chilli for 2 minutes over a low heat.
  2. Add the mussels, stir, add the soy sauce and cover.
  3. Leave to cook over a low heat for 5 minutes (the mussels should be open).
  4. Add 5 drops of lime extract.
  5. Stir once more.
  6. Serve in a soup plate.
