I discoverThai style mussels with lime flavour

- 1 bird's eye chilli
- 50g butter
- 1 tablespoon of olive oil
- 75 cl red wine
- 1 stick of lemongrass
- 5 cl sesame oil
- 30g fresh ginger
- 10 cl sweet soy sauce
- 400g bouchot mussels
- 5 drops of lime flavouring
Preparation:

Heat the sesame oil in a saucepan, fry the ginger, lemongrass and chilli for 2 minutes over a low heat.

Add the mussels, stir, add the soy sauce and cover.

Leave to cook over a low heat for 5 minutes (the mussels should be open).

Add 5 drops of lime extract.

Stir once more.

Serve in a soup plate.
