I discoverTiramisu with bitter almond flavour

Long
- 30cl unsweetened black coffee
- 250g flat spoon biscuits
- 4 eggs 500g mascarpone
- 80g caster sugar
- 45g cocoa powder
- 1.3 tsp. natural bitter almond flavouring
1/ Separate your egg whites from the yolks
2/ Mix the yolks with the sugar
3/ Whisk in the mascarpone and bitter almond
4/ Beat the egg whites until stiff.
5/ Gently fold them into the previous mixture without breaking them.
6/ Dip the biscuits one by one into the cold coffee
7/ Arrange them tightly in a dish or in verrines.
8/ Cover with the mascarpone mixture and a second layer of coffee-soaked biscuits.
9/ Cover again with the mascarpone mixture.
10/ Leave to cool for about 3 hours.
11/ At the last moment before serving, sprinkle the tiramisu with cocoa powder
