I discoverWaffles with avocado and Mango flavoured whipped cream
200 g flour
30 g sugar
25 cl milk
1 pinch of salt
3 eggs
20 g butter
2 avocados
For the whipped cream :
25 cl full cream
25 cl icing sugar
5 drops of natural mango flavouring
Preparation :
1. In a bowl, mix the flour, egg yolks and softened butter
2. Stir in the milk gradually without making lumps.
3. Beat the egg whites with a pinch of salt and add to the mixture, stirring gently.
4. Leave the mixture to rest while you prepare the whipped cream.
5. The cream should be very cold, place it in the freezer for 15 minutes before starting to whip it.
6. Mix the cream with the icing sugar and the 5 drops of chosen flavouring in a cold bowl, then use your whisk (hand-held or, quicker and less tiring, electric).
7. Whip the sweetened cream, slowly at first, then faster and faster as it rises (it becomes thicker and thicker).
8. The whipped cream is ready when it is thick and forms a beak at the end of the whisk.
9. Then cook the waffles in a lightly buttered waffle iron.
10. Allow the waffles to cool, then cut your avocado into strips and place them on your waffle.
11. Finally add the whipped cream and enjoy!
