I discoverYuzu-flavoured raspberry tartlets

- 2 puff pastries
- 1 tin of raspberries
- 1 egg yolk
- 25cl milk
- 50g sugar
- 25g flour
- 2 teaspoons yuzu flavouring
Preparation time:
- Preheat the oven to 180°C
- Line two tart tins with the pastry discs.
- Prick the base with a fork.
- Place in the oven for 20 minutes.
- Leave to cool when removed from the oven.
- Mix the sugar and egg yolk.
- Stir in the flour and half the milk.
- Set the mixture aside.
- Heat the remaining milk in a saucepan, then add the yuzu flavouring while stirring.
- Cook the cream.
- Remove from the heat when the cream is thick enough.
- Leave to cool.
- Clean the raspberries.
- Fill your tartlets with the Yuzu cream.
- Decorate the top with the raspberries.
- Chill until just before serving.
