Yuzu-flavoured raspberry tartlets

  • 2 puff pastries
  • 1 tin of raspberries
  • 1 egg yolk
  • 25cl milk
  • 50g sugar
  • 25g flour
  • 2 teaspoons yuzu flavouring

Preparation time:

  1. Preheat the oven to 180°C
  2. Line two tart tins with the pastry discs.
  3. Prick the base with a fork.
  4. Place in the oven for 20 minutes.
  5. Leave to cool when removed from the oven.
  6. Mix the sugar and egg yolk.
  7. Stir in the flour and half the milk.
  8. Set the mixture aside.
  9. Heat the remaining milk in a saucepan, then add the yuzu flavouring while stirring.
  10. Cook the cream.
  11. Remove from the heat when the cream is thick enough.
  12. Leave to cool.
  13. Clean the raspberries.
  14. Fill your tartlets with the Yuzu cream.
  15. Decorate the top with the raspberries.
  16. Chill until just before serving.
